Today, the Restaurant is Yours

Hola! We are Karen (left) and Darlyn (right) and today was our second day in Xela! We woke up early for breakfast and then went to visit the Red Cat restaurant downtown. We had a fantastic time there; it was a unique and unforgettable experience, from learning about the restaurant’s history to seeing every wall covered in art, with hand-painted murals that told stories and inspired us!


At Red Cat, we became chefs for a day, since Willy the owner told us, “Today, the restaurant is yours!” We had three professional chefs on hand, who guided us every step of the way with their expertise and advice. The lunch we prepared was “Chili Willy,” which has a ton of ingredients like:
-red beans
-ground beef
-lettuce
-tomato
-onion
-parsley
-cheese

Served with homemade nachos and a touch of chili to taste!

We even made a fancy chia-lime drink! And for dessert, we had the experience of trying figs in a different way, paired with artisanal caramel, also made by us, and a chocolate brownie from a local bakery.

At the end of it all, we organized ourselves to clean up the place and get some rest!


Afterwards, we headed back to the retreat center to have some free time, which we used to spend time together, playing lots of fun games, telling entertaining stories, and joking around a lot until dinnertime – which we had later than scheduled because we were so full from lunch!


And after reflecting, we got ready for the next day of experiences here in Xela. We finished very tired, but always happy for these wonderful experiences offered to us thanks to everyone who is supporting us. Always thanking God for each day and for every opportunity we have!

  • It was a great experience to meet each of you on the call last night. It was my pleasure to treat to ice cream as POPS is my favorite in Guatemala when I come each year. I am so glad you each are having a wonderful time and I look forward to all the reports from Carrie!!
